Inspired by the larger than life cowgirl Hallie Stillwell and the ranchers that our great state was built upon, we set out to create a bold dining destination that celebrates the rich heritage of Texas ranching.

Our menu combines traditional options with adventurous new flavors, backed by a stunning wine list and inventive cocktails.
Stillwell’s proudly serves HWD, Harwood Premium Beef, our own ultra-high end, locally raised prime graded Akaushi cattle. Through a partnership between Harwood and local Texas/Oklahoma ranches, we are able to offer our guests this exclusive, locally grown beef that makes for an exceptional steak you can’t find anywhere else.

Stillwell's, located in Hôtel Swexan, is an innovator in the Dallas wine scene and something that we pride ourselves on. Tradition is the cornerstone of our list - we offer not only the finest producers from the top properties around the globe but also older wines from the best vintages.
The wine program offers Swexan-only exclusive choices, that have been specifically selected for us in the Dallas market. The list is dynamic and changes often to reflect the wine world and its ever-changing landscape. We pride ourselves in having the lowest markups in all of Texas. We also offer choices that show off the current happenings globally; what we believe will be some of the best producers in the near future.
